Kimchi

Last Thursday for my birthday Ben took me to a Korean Restaurant so we could finally try Kimchi and other popular Korean dishes. Kimchi is one of the most, if not the most popular Korean food. We really lucked out at choosing the right place because our waitress was also the owner and she taught us so much about the different foods and even Korean customs. Before our meal she brought out an assortment of several foods for us to try and Kimchi was one of them. I must also say that it was my favorite out of everything! Our main dishes were the popular Bibimbap and Bolgogi which were also great. Yesterday I explored an Asian Market right near my house with mainly Korean goods/foods and they sell already made Kimchi. I brought it home for last night's supper. Ben has taken a real liking to the Kimchi! Today we are 2 months and 23 days into our wait for our referral. The longer the wait the harder it gets, but staying busy and exploring new things really helps.

Yesterday we attended our second and last all day Adoption Training Class! We are excited to have this part of our journey under our belts. The best thing about the classes was hearing the experiences of other families who had adopted children. We got some great information and made friends that will share in our experience. I also learned from one mother that when her baby came home at 8.5 months, he ate Jook (korean rice porridge). I have been looking online to figure out how to make this, since the babies there don't eat baby food like we have in America. I found several recipes. Now I just need a rice cooker! I have so much to learn! Last night we celebrated my sister's 40th birthday with her and had a great time and today is my brother's birthday. Happy Birthday Katie and Matt! I also got an early birthday present from my sister this morning and she gave me all gifts for mothers! These were my first new mommy gifts. One of them was a magnet frame for the fridge so when we get our referral picture we can post it there, but of course there will be pics in each room as soon as we get them. Today we are 2 months, 12 days into our wait...............Tick Tock, Tick Tock

Yesterday we attended our 1st of 2 adoption training classes! We met 10 other great couples who are also on their path to parenthood. Ben and I and one other couple were the only ones without any children. The other couples either already had their own biological children or adoptive children. There were 3 other couples there who are also working with our adoption agency who would be adopting from South Korea. One of those couples already has a son from S. Korea and we saw his pictures. He was absolutely beautiful! At our training we learned about attachment and becoming a transcultural/transracial family. We think this will be an amazing experience and we can't wait to share our culture/traditions with our baby and we can't wait to learn more about Korean cultures and traditions. So far I have learned to say the Korean alphabet and read some korean letters. I also got our baby a vintage Korean flag from the Korean war and had it framed. I am hoping to hang it over the crib. We do still have to get a crib though, so for now it is on the floor in the baby's room. I am posting a pic of it. We love it and it will ALWAYS remind us of the gift we were given from Korea!
